Caraway is an important ingredient in Germanic and Scandinavian cuisine. Its aniseed flavour is used to flavour sauerkraut, roast meat and certain cheeses such as Munster.
Lightly roasted, the seeds enhance the taste of cookies or breads. Caraway oil is the base of liqueurs like the famous Nordic “kummel”.
