Cardamom has a very strong fragrance, so it should be used sparingly. However, it is not pungent. Its floral, fresh and slightly lemony aroma reminds that of the eucalypthus.

Cardamom is the dried fruit of a perennial herbaceous plant of the ginger family (zingiberaceae). The best known is the green cardamom from southern India. The amateurs find there a subtle lemon and peppery savour but not pungent.

The cardamom has many medicinal virtues :

• It is diuretic, antiseptic, anti-inflammatory;
• It is a valuable aid to digestion by reducing bloating and relieving heartburn.
• These small nuggets are also a reservoir of minerals and trace elements (calcium, magnesium, potassium, phosphorus, iron, zinc …).
• It also contains vitamins B2 and B6.
