Clove has a penetrating, warm and rich aroma. Its taste is pungent and bitter. It is used to decorate broths, marinades, meats, stews, preserves, vinegars. It is also used to flavour many delicatessen products (black pudding, sausages, pâtés).
On the sweet side, it is often associated with cinnamon or nutmeg for the preparation of pastries and other cakes.
